My name is Luca (Luchino to my friends, for obvious reasons related to my height).
A few years ago, with just a few gray hairs and one child, I founded a small chain of restaurants called “SORRYMAMA.” In the kitchens of these restaurants, we always experimented a lot, but the star dish was Mamma's: lasagna.
One afternoon, playing around with dough and ovens, I was looking for a dish that could complement the appetizer section or serve as a side dish, a bit like fries for hamburgers!
That afternoon, in that kitchen on Corso di Porta Romana in Milan, the very first “lasagna chips” were born and served to customers as if they were nachos but with Italian sauces.
Customers loved them right away, so they became part of our menus.
But that wasn't enough for me, and I wanted to devote myself to this product because I saw its potential. I sold the restaurants and dedicated myself to extensive research and development on the product.
